unbundle EHCache from the fat jar

Description

It’s 20mb, almost 1/4 of the fat jar and not used so much anymore

On install, there are 3 copies of this + the exploded jars

It can still be installed when required as it’s an extension

It’s also causing 6.2 to be flagged (due to a pom entry for jackson-databind-2.11.1, not the actual jar) as having a CVE on docker hub, which won’t be addressed until

I have tested this ticket with Lucee version 7.0.0.115-SNAPSHOT. The EHCache bundle has been removed, and after downloading the extension, it works fine with no issues encountered
