server scope can no longer be serialized

Description

The somewhat recent changes that causes the network adapter's MAC address to be lazy loaded has caused errors when you try to JSON serialize the server scope. This happen for instance, if you simply type "server" from the CommandBox REPL.

I've analyzed this ticket & confirmed the issue happened on latest version. But this not happened on lucee 4.5 version. Working fine on local.
